Ingredients

  • 2 cups endive , shredded, or your favourite salad green (100g)
  • 1 med tomato , sliced / diced (120g)
  • 1 med avocado , diced (200g)
  • 6 black olives , pitted and sliced (20g)
  • 1 tbsp red onion , sliced and roughly diced (15g)
  • 5 med mushrooms , sliced / diced (50g)
  • 1 tbsp mediterranean salad dressing or your favourite salad dressing

Method

  • Roughly chop the endive or salad greens and place them in a salad bowl.
  • Prepare the other vegetables and layer them on top of the greens.
  • Just before serving, add the dressing and toss the salad to coat.
