I've finally discovered the perfect use for overgrown zucchinis - make them into a raw zucchini sandwich. Just chop them into slices of "bread" and add your favourite fillings. Too easy.
I've been playing even more with opening coconuts and making coconut concoctions - this recent lunch was simply sliced bananas with coconut yoghurt and a chocolate coconut cream. Definitely an awesomely raw, vegan, wholefood lunch. I mean, when would you normally get to eat cream and chocolate for lunch?
Yesterday for lunch, I made a quick fruit salad, with one sliced banana and two sliced strawberries, added a few generous spoonfuls of my tasty coconut yoghurt, and topped it off with a drizzle of raw orange marmalade. Yum.
I'm currently exploring ways to eat sauerkraut that don't involve hot dogs. So I paired wholegrain brown rice with a couple of tablespoons of sauerkraut and a grated apple. I call it "Brown Rice with Sauerkraut and Apple". Delicious, healthy and filling. Yum!
I picked up a vibrant bunch of fresh chicory from my local organic greengrocer yesterday, and made a salad with kelp noodles, sauerkraut and red capsicum. It was tangy and bitter, with a hint of sweet from the red capsicum, and the lemon juice pulled it all together nicely.
So what does a raw vegan eat on a daily basis? Well, it varies tremendously, but there's always a central theme of raw, vegan, whole foods that I keep coming back to, no matter how much I play with other ideas and recipes. Here's a sample of my recent raw vegan daily diet.
I've been eating kelp noodles every day this week for lunch, in a super quick and easy kelp noodle chili salad, and I must say, I've been really enjoying it. So easy, so convenient and so delicious.
Here's another awesome way to eat raw flax crackers: top them with generous helpings of raw walnut cheese and raw pear and muscat jam, and finish it off with creamy chunks of fresh avocado.
