Just look at these cute little "mice in jackets" - baked potatoes, filled with cheesy mashed potato and decorated with vegetable pieces. Before you know it, your kids are happily eating a bunch of fresh vegetables. How can they resist such cute, edible creations?
So what does a raw vegan eat on a daily basis? Well, it varies tremendously, but there's always a central theme of raw, vegan, whole foods that I keep coming back to, no matter how much I play with other ideas and recipes. Here's a sample of my recent raw vegan daily diet.
I made Ani Phyo's raw tomato chili with walnut taco meat the other night, and I must say it was rather delicious. A great winter meal, especially if you blend it until it warms up, and serve it in pre-warmed chunky ceramic bowls. Mmmmmmmm, toasty warm :)
I had a go at making raw mushroom soup for dinner the other night. I mostly followed This Rawsome Vegan Life's recipe for creamy mushroom soup with avocado and miso, but made lots of alterations along the way. It was warm and tasty and strangely filling for something so light and almost mousse-y.
