When I first started out with raw food, I’d never heard of kale.
In fact, I was so utterly oblivious to its existence that I had to ask my local organic greengrocer what it was.
And as I’ve gone through my raw food journey, I’ve come to realise that kale is actually one of the best leafy green vegetables you could ever eat.
I’ve yet to master the art of an irresistible kale salad, but I’ve discovered three other amazing ways to eat heaps of kale, and really enjoy it.
Kale has a pretty strong “green” taste at the best of times, but something about the mango and banana combination in this green smoothie transforms that distinctive kale taste into an amazingly delicious experience.
This is definitely my favourite green smoothie ever (and I’ve made a lot of green smoothies in my time), so each year I hang out for mango season to arrive so I can lose myself all over again in this creamy, sweet concoction.
I love waking up each morning to the bittersweet taste of this fresh kale, carrot, celery and apple juice.
Again, it’s the bitterness of the kale that actually makes this recipe work.
The milkiness of the carrot juice creates a rich base for this coffee alternative, with the apple for sweetness and the kale for bitter.
I’m haven’t yet figured out what role the celery plays, but I do know that the whole symphony of flavours comes together to create a healthy morning brew that rocks!
3. Kale Chips
I discovered these raw vegan kale chips from Loving Earth a few months ago, and life has never been the same since.
I’ve been known to scoff an entire packet in one sitting, which may not be ideal, but I find them pretty irresistible.
Each packet is apparently equivalent to around two whole cups of fresh kale, so it’s certainly a very enjoyable way to eat a lot of kale.
It’s easy to eat more kale
So, with three amazing ways to enjoy eating lots of kale, and no salad recipes in sight, I’ve left you with no more excuses.
It’s time to eat your greens, and enjoy them.
