How’s this for a super quick and tasty snack?
Swiss brown mushroom cups topped with raw vegan cheese and kidney beans.
Now, the kidney beans aren’t raw (because they’re a bit hard to digest that way), but they are super good for you.
I figure, if I’m going to include cooked foods in my diet, I’d rather it be foods that are packed with goodness, like these beans.
And they do also taste rather nice, especially in combination with the tang of the cheese and the “meatiness” of the mushrooms.
And they took me all of 1 minute each to whip up.
The perfect way to finish off my lunch.
