OK, technically it’s actually raw coconut yoghurt, but doesn’t “strawberries and coconut cream” sound so much better?
And so much more decadent, too.
I love berries. And I love summer, when all the different berries come into season. Such bright colours and such amazing flavours.
I understand berries are really good for you too – full of antioxidants and all kinds of micronutrients – which is really just an added bonus, don’t you think?
Who could resist such vibrant, seductive strawberries like these ones? Especially when they taste so darned good.
And when you pair them with the sweet and tangy taste of raw coconut cream (yoghurt), it really doesn’t get much better than this.
I’ve been continuing to practice opening coconuts, and every time I do, I make more of Gena Hemshaw’s raw, vegan vanilla coconut yoghurt, using the leftover coconut flesh.
I’ve adapted her recipe slightly, to use dates instead of maple syrup, agave or coconut nectar, and I can never bear to use up our raw almond milk, so I mostly just use water.
But it still turns out OK. Better than OK. Awesome, in fact.
Brilliant with bananas, moreish with mangoes and stunning with strawberries.
The kind of stuff you can just keep in the fridge (for at least 4 days, if it lasts that long) and just add to almost anything, for that extra wow factor.
And I love that it’s instant. I’m just an “instant gratification” kind of girl.
Honestly, I really do appreciate the value of pre-soaking, and sprouting, and fermenting, and dehydrating. I know that it’s good for me, and I know that it’s worth the time and effort.
But most of the time I just don’t have the patience. I’m hungry and I want to eat something NOW! So my bestest, favouritest recipes are the ones I can make on the spot.
And when I’ve finally perfected my version of instant raw coconut yoghurt, I promise to share it with you.
In the meantime, I’m just going to have to enjoy my strawberries and coconut cream all by myself.
Sigh. It’s a tough life.
