My body’s been craving lighter foods at the moment, so I’m eating lots of simple meals based on fruits and veggies, and drinking lots of green smoothies.
I made this dish up for my lunch today and I call it “raw applesauce pudding”.
My Dad used to make something he called “apple moosh” when I was growing up, which consisted of stewed apple, coconut, sultanas and a bunch of other things I don’t remember, but it was always a delicious treat.
I started this version with a base of raw applesauce, which is basically pureed apples. Easy, sweet and gentle on the belly.
Then I added some shredded coconut, a pinch of cinnamon, a sprinkle of hemp seeds and a scattering of activated sunflower seeds.
I topped it off with a couple of chopped dates, and I must say it turned out rather well. Enough substance, texture and flavour to be interesting, but not too rich or filling.
